This Festive Cocktail – How to Make It

We present a home-style version of a beverage featured on our latest menu. This is a batch pre-mixed that's bursting full of tastes of a festive period, which makes it perfect for a festive gathering. Reserve the remaining cordial to use in breakfast cocktails, sweets, or to make additional servings of the drink.

The Bikini Cocktail

Makes enough for 10 guests

For the Citrus Syrup (makes 750ml)

300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g granulated sugar

For the Cocktail (makes 850ml, enough for 10)

400ml premium vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml citrus syrup (as made above)
Whole cranberries, to garnish
Mandarin essential oil, to finish

Method

To prepare the Cordial: Place all the items inside a pot, bring to a gentle boil, agitating to dissolve. Then, remove from the heat and leave to reach room temperature fully. Decant into a sterilised bottle, close it and store in the fridge, where it will keep for around four weeks.

For the Batch Mix: Pour the specified liquids into one big jug, leave to sit for 60 minutes, then filter it preferably using muslin, so it's perfectly clear.

To serve: Pour 85ml from the premix into your stirring glass packed with ice, gently stirring gently for about 60 seconds until cold. Strain into an frosted cocktail glass or similar, garnish with the cranberries and finish by giving it a quick spritz of mandarin oil over the drink.
